Kabosu is a Japanese citrus fruit that grows mainly in the Oita prefecture. A more acidic agrum compared to yuzu which gives a nice fraicheur when used as a spice on grilled fish, sashimi or stew, mushrooms, in the preparation of ponzu sauces, cakes and ice cream. In cocktails this gives a surprising twist but can also be drunk with soft drinks and beer.
